  • 1 lb trout fillets (or any firm white fish)
  • ¼ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 2 Tbs salted butter
  • ½ cup slivered almonds
  • 1 lemon, quartered


  1. Preheat oven to 350°F.
  2. Place trout on baking sheet and season with sea salt and freshly ground black pepper.
  3. Bake for 15-20 minutes, or until fish flakes with a fork.
  4. After 10 minutes of baking, heat a small skillet over medium heat on the stovetop.
  5. Add butter to pan and cook, stirring frequently, until browned. Quickly add almonds and cook for an additional minute.
  6. Remove from heat.
  7. When fish is done, top with butter and almond mixture and garnish with lemon slices.
