Taco Breakfast

  • ½ lb ground beef
  • 1 Tbs chili powder
  • ½ tsp granulated garlic
  • ½ tsp ground cumin
  • ½ tsp sea salt
  • ½ yellow onion, diced
  • 8-10 cherry or grape tomatoes, sliced in half
  • ½ cup sliced black olives
  • 1 Tbs butter
  • 2 large eggs
  • ¼ cup salsa
  • 2 Tbs fresh cilantro, chopped


  1. Place a large skillet over medium-high heat. Add ground beef, spices, and onion. Stir occasionally until meat is fully cooked.
  2. Stir in tomatoes and olives.
  3. Meanwhile, heat a medium non-stick pan over medium heat. When pan is hot, add butter (it should sizzle slightly, but not turn brown instantly).
  4. Crack eggs into buttered pan, and cook as desired.
  5. Divide ground beef mixture onto two plates. Top each with two eggs, salsa, and fresh cilantro.

    Just browsing your website (considering joining) and clicked on the Taco Breakfast recipe.

    Noticed the ingredients calls for 2 eggs, but the instructions seem to indicate 4.

    Just an fyi.

    As step 5 says to top each of two plates with two large eggs, shouldn’t the ingredient list call for 4 large eggs?
