Sweet Coconut Curry Chicken

Ingredients

  • 3 Tbs coconut oil
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 2 Tbs ground coriander
  • 1 tsp turmeric
  • 2 tsp ground cumin
  • ¼ tsp crushed mustard seed
  • ½ tsp cayenne
  • 1 Tbs fresh ginger, grated
  • 1 lb boneless, skinless chicken breasts, diced
  • 1/3 cup water
  • ½ tsp sea salt
  • 2 medium zucchinis, diced
  • 3 cups cauliflower florets
  • 1 (403 mL) can full fat coconut milk

Instructions

  1. Heat a large skillet over medium-high heat. Add oil when pan is hot.
  2. Add onions and garlic, and sauté, stirring frequently, for 5 minutes. Add spices and ginger, and continue to cook for a few minutes.
  3. Add chicken and sauté for an additional 5 minutes.
  4. Add water and salt. Cover and reduce heat to medium-low. Simmer for 30 minutes.
  5. Add zucchini and cauliflower. Cover and continue to cook for 15 minutes.
  6. Uncover, stir in coconut milk and continue to cook for an additional 10 minutes.
