Steak with Herb Butter

  • 2 (4-6 oz each, about 1” thick) beef steaks (rib-eye, NY strip or sirloin recommended)
  • 2 Tbs butter, room temperature
  • ¼ tsp sea salt
  • 1/8 tsp freshly ground black pepper
  • ¼ tsp granulated garlic
  • ½ tsp oregano or basil


  1. Preheat broiler to high.
  2. In a small bowl, combine butter, salt, and all herbs.
  3. Place steaks on broiler pan.
  4. Broil 2″-3″ from heat source (usually the very top of the oven) for 7 minutes for medium-rare (8 minutes for medium). Remove from oven and turn steaks. Return to oven and broil the other side an additional 5 minutes for medium-rare (6 minutes for medium).
  5. When desired internal temperature is reached, remove steaks from oven, spread butter on top, and cover with foil to let rest 5 minutes.

NOTE: To cook steaks on the stovetop, heat a heavy bottomed skillet over medium-high heat. Add 1 tsp coconut oil or lard when pan is hot. Add steaks and cook for 10 minutes for medium rare. Turn and continue to cook for another 14 minutes. Remove from heat, spread butter, cover with foil, and let rest 5 minutes before serving.
