  • 1 lb bone-in, skin-on whole chicken legs
  • 2 Tbs unsalted butter
  • 1 tsp paprika
  • 1 tsp coriander
  • ½ tsp ginger
  • ¼ tsp clove
  • ¼ tsp cinnamon
  • 1 tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 1 lemon
  • 1 cup green olives
  • 2 cloves garlic, minced
  • 1 (4 oz) jar artichoke hearts
  • ¼ cup slivered almonds, lightly toasted


  1. Preheat oven to 350°F.
  2. Combine all spices, salt and pepper in a small bowl.
  3. Place chicken legs in an ovenproof baking dish. Carefully rub each leg with the butter and the spice mixture. Be sure to rub between the skin and flesh of each leg, too.
  4. Cut both stem ends off the lemon. Keeping the peel on, quarter the lemon lengthwise, and then slice each of these quarters into 1/8” slices.
  5. Place the lemon, olives, garlic, and artichoke hearts around and under the chicken legs.
  6. Bake uncovered for 30-45 minutes, or until internal temperature reaches 165°F.
  7. Top with toasted almonds to serve.
