  • 1 Tbs olive oil, coconut oil or lard
  • 1 clove garlic, minced
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 4  large eggs
  • ½ lb ham, bacon, chicken or sausage, cooked and diced
  • 2 oz cheddar or pepper jack cheese, shredded (about ½ cup)


  1. Heat a large skillet over medium-high heat.
  2. When skillet is hot, add oil, garlic, zucchini and red bell pepper.
  3. While vegetables cooks, beat eggs in a small bowl.  Set aside.
  4. Stir vegetables often, just until slightly tender (about 5 minutes).
  5. Add eggs and meat of choice. Turn heat to low.
  6. Stir constantly, until eggs are fully cooked.
  7. Top with shredded cheese to serve.
