  • 1 lb salmon fillet (skin-on)
  • 1 tsp olive oil
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper


  1. Preheat oven to 500°F. Place a baking sheet in oven to heat.
  2. Using a sharp knife, make several cuts into the skin of the salmon (about 1 inch apart). Do not cut into the flesh while doing this.
  3. Season fillets with sea salt and freshly ground black pepper.
  4. When oven has reached temperature, remove the hot baking sheet. Reduce oven temperature to 275°F
  5. Place salmon skin-side down on the hot baking sheet and return to the oven immediately. Cook for about 10-15 minutes, or until salmon is cooked as desired.
