Scrambled Eggs with Sausage

  • ½ lb sausage links, sliced
  • ½ red bell pepper, diced
  • 1 garlic clove, minced
  • 4 large eggs
  • 1 Tbs water or milk
  • 1 Tbs butter
  • 2 handfuls baby spinach
  • fresh herbs of choice (optional)


  1. Heat a medium skillet over medium-high heat. When hot, add sausage links, red pepper and garlic, and sauté until sausage is browned and cooked through (stirring occasionally to prevent burning).
  2. Meanwhile, beat eggs and water (or milk) in a small bowl.
  3. When sausage is browned, add beaten eggs, butter and spinach, and stir constantly until cooked through.
  4. Top with fresh herbs (optional) to serve.
