  • 1 Tbs coconut oil
  • ½ lb sausage links, cut into ½” slices
  • 4 medium white button mushrooms, sliced
  • 3 handfuls (cups) baby spinach leaves
  • Salt and pepper, to taste


  1. Heat a large skillet over medium-high heat. Add oil when pan is hot.
  2. Add sausage links and mushrooms, and cook until browned (about 10 minutes).
  3. When sausage is cooked through, add spinach. Cook just until wilted.
  4. Season with salt and pepper.
