Roast Beef with Vegetables

Approximate cooking time: 4-8 hours in the crockpot

  • 3-4 lb beef roast
  • ½ tsp thyme
  • 1 Tbs sea salt
  • 1 yellow onion, diced
  • 2 medium carrots, cut into ½” slices
  • 2 celery stalks, cut into ½” slices
  • 1 head cauliflower, cut into florets
  • 2 garlic cloves, crushed
  • ½ Tbs black pepper corns
  • 1 bay leaf
  • 1 cup water


  1. Rub roast with salt and thyme, and place in a large ovenproof pot or a crockpot.
  2. Top with remaining ingredients. Cover and cook in 350°F oven for 3-4 hours, or in a crockpot for 5-7 hours (or until tender).
  3. Add cauliflower at any point during cooking (earlier if softer texture is desired, or add near the end if you prefer them to be less cooked).
