Pork Tacos

Ingredients

  • 1 Tbs coconut oil or lard
  • 1 lb pork tenderloin, cut into ½” slices
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp granulated garlic
  • ¼ tsp ground cumin
  • 1 jalapeno, seeded and minced
  • 1 garlic clove, minced
  • juice of 1 lime
  • 2 medium tomatoes, diced
  • 4 oz pepperjack cheese, grated
  • 1 avocado, sliced
  • 4 Tbs sour cream
  • 1 head green leaf or butter lettuce

Instructions

  1. Heat a large skillet over medium-high heat. Add oil when hot.
  2. Season pork with salt, pepper, granulated garlic and cumin. Add to pan, along with jalapeno and garlic clove.
  3. Brown pork, stirring occasionally, until fully cooked. Remove from heat and drizzle with lime juice.
  4. Serve pork on lettuce leaves and top with tomatoes, cheese, avocado and sour cream.
