Massaged Kale Salad

A rich and hearty side dish with a whole lot of nutrients.

Note: This dish seems high in carbs at 55 grams, but 28 of those grams are from the kale, and you can always cut down on the grams by omitting the currants.

  • 8 large Lacinato kale leaves
  • ½ tsp sea salt
  • 2 Tbs olive oil
  • 2 tsp apple cider vinegar
  • 1 small apple, cored and diced
  • ¼ red onion, diced
  • ¼ cup toasted sesame seeds
  • ¼ cup dried currants
  • 2 oz crumbled goat cheese


  1. Wash kale leaves, remove woody stems, and slice thin.
  2. In a large bowl, combine kale and sea salt. Gently “massage” the kale until it wilts slightly (about 3 minutes). Drain excess water from the bottom of the bowl.
  3. Combine all other ingredients with the kale. This salad may be served immediately, or kept in the refrigerator for up to two days.
