  • 3 Tbs coconut oil
  • 1-1/2 lb boneless, skinless chicken thighs, diced
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 8 white button mushrooms, sliced
  • 1 clove garlic, minced
  • 2 red bell peppers, seeded and diced
  • 2 medium zucchinis, diced
  • juice of ½ lemon
  • 4-6 large basil leaves, thinly sliced
  • 4 oz Parmesan cheese (or any hard sheep’s milk cheese such as Romano or Pecorino), grated


  1. Heat a large skillet over medium-high heat. Add oil when pan is hot.
  2. Season chicken with salt and pepper. Add to pan, and brown for about 5 minutes, stirring often.
  3. Add mushrooms and garlic, and continue to sauté for about 5 minutes.
  4. Add red peppers and zucchini, and continue to cook until vegetables soften slightly and chicken is fully cooked.
  5. Remove from heat, add lemon juice and basil, and toss mixture.
  6. Top with Parmesan to serve.
