Lamb Burgers with Tzatziki

Ingredients

  • 1 lb ground lamb
  • 1 shallot, finely minced
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 1 small (4”-5”) cucumber, minced
  • ½ cup plain Greek yogurt
  • juice of ½ lemon
  • 2 tsp fresh mint, chopped
  • 2 tsp fresh parsley, chopped
  • 1 garlic clove, minced
  • 1 medium tomato, sliced
  • ½ small red onion, sliced thin
  • 2 oz crumbled feta
  • ½ cup Greek black olives, pitted
  • 1 small head green leaf or butter lettuce

Instructions

  1. Heat a large skillet over medium heat.
  2. Combine lamb, shallot, salt and pepper in a mixing bowl, using a fork. Form 4 patties, and place in heated skillet.
  3. While burgers cook, combine cucumber, yogurt, lemon juice, mint, parsley and garlic to make tzatziki.
  4. Turn burgers and continue to cook to desired temperature.
  5. Serve on lettuce with tomato slices, red onion, feta, olives and tzatziki.
