Citrus Marinated Chicken

  • 1 lemon, juiced
  • 1 lime, juiced
  • 1 small orange, juiced
  • 2 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 1 lb boneless, skinless chicken thighs


  1. In a medium bowl, combine lemon, lime, and orange juices with ginger, garlic, salt and pepper.
  2. Add chicken and turn to coat all sides. Cover and refrigerate at least 4 hours (up to over night).
  3. Shortly before mealtime, preheat oven to 400°F.
  4. Drain chicken, reserving marinade for later use. Place on ungreased baking sheet. Bake for 10 minutes.
  5. Remove chicken from oven. Brush chicken with reserved marinade. Turn over and brush with marinade.
  6. Return to oven and cook for an additional 10 minutes, or until chicken reaches an internal temperature of 165°F.
