  • 1 head red leaf lettuce, chopped
  • 4 Tbs ranch dressing
  • 2 eggs, hard-boiled, shelled, and halved
  • ½ lb ham, cooked and chopped
  • 2 bacon slices, cooked and crumbled
  • 1 medium tomato, diced
  • 4 green onions, sliced thin
  • 2 oz cheddar cheese, cubed
  • 1/2 avocado, diced


  1. In a large bowl, toss lettuce and ranch dressing. Divide onto two plates.
  2. Top with remaining ingredients.


*NOTE: If you are preparing this ahead of time, skip step 1, and add dressing just before serving.

    This was delicious. I am a diabetic and this is great for dinner. Thank you so much for coming up with this. It would be great to have other low carb meats, but hey, can’t have everything.
