Cheesy Chicken with Broccoli

  • 1 Tbs coconut oil
  • 1 lb boneless, skinless chicken breasts, diced
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 lb broccoli florets
  • ½ cup water
  • 1 cup milk
  • 4 oz sharp cheddar cheese, grated
  • ½ tsp crushed red pepper flakes (optional)


  1. Heat a large skillet over medium-high heat. Add coconut oil when pan is hot.
  2. Season chicken with salt and pepper, and add to hot pan, along with garlic. Cook, stirring occasionally, for 7-10 minutes (or until chicken is almost fully cooked).
  3. Add broccoli florets and water. Cover, and steam until broccoli is bright green and chicken is fully cooked (about 5 minutes).
  4. Meanwhile, heat milk, cheese and crushed red pepper in a small saucepan over medium-low heat. Stirring frequently, cook until cheese melts into a sauce.
  5. Pour cheese sauce over chicken and broccoli mixture to serve.

    Is there a particular reason for preferring milk over cream in this recipe? Wouldn’t cream be lower in carbs?
