Cabbage Rolls

Ingredients
- 8 large cabbage leaves
- 1 lb ground pork
- 1 clove garlic, minced
- ½ tsp oregano
- 1 tsp sea salt, divided
- 2 Tbs butter
- 1 shallot, minced
- 1 (8 oz) can tomato sauce
- ¼ tsp tobasco
- toothpicks (optional)
Instructions
1. Bring a large pot of water to a boil. Add cabbage leaves and cook for 3-5 minutes, or until tender. Remove from water and set aside.
2. Meanwhile, add pork, garlic, oregano, and ½ tsp sea salt to a medium skillet over medium-high heat. Cook completely.
3. Add butter to another small saucepan over medium heat. When butter has melted and starts to sizzle, add shallot and cook for 3-5 minutes. Add tomato sauce and tobasco and bring to a simmer. Season with sea salt.
4. While sauce cooks, evenly distribute pork onto cabbage leaves. Roll each leaf and fasten with a toothpick if desired.
5. Top with sauce to serve.
