Ingredients

  • 1 lb white fish fillets
  • ¼ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 1 medium tomato, diced
  • ½ cup green olives, pitted and sliced
  • 1 Tbs capers
  • 1 Tbs fresh parsley, chopped
  • 2 Tbs olive oil
  • juice of 1 lemon

Instructions

  1. Preheat oven to 350°F.
  2. Place white fish fillets in a shallow oven proof dish.
  3. Sprinkle each side with sea salt and pepper. Set aside.
  4. In a small bowl, combine remaining ingredients.
  5. Top fish with mixture and bake 25-30 minutes, or until fish flakes easily with a fork.
