Braised Lamb with Horseradish

Ingredients

  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • 1-1/2 lb boneless lamb roast, cut into 1” cubes
  • 1 Tbs olive oil
  • 3 garlic cloves
  • ½ cup chicken broth
  • ½ cup dry white wine
  •  1 tsp prepared horseradish

Instructions

  1. Preheat oven to 350°F.
  2. Season lamb with salt and pepper.
  3. Heat an ovenproof pot on the stovetop over high heat. Add olive oil when hot, and immediately place lamb in pot to sear (brown) one side (about 45 seconds to 1 minute). Turn roast over and brown other side. Remove meat from pan and hold on a plate.
  4. Reduce heat to medium, add garlic and quickly sauté until golden brown. Add broth, wine and horseradish. Stir the bottom of the pan to loosen the browned bits and simmer for a few minutes.
  5. Add lamb back to pan, cover, and place in oven for 1-1/2- 2 hours, or until lamb is tender.
