Braised Greens with Bacon

These greens would be delicious on their own, but we all know bacon makes everything taste better...

  • 2 bacon slices, diced
  • 1 lb kale, chard or collard greens, roughly chopped, with tough stems removed
  • 1 clove garlic, sliced
  • juice of 1 lemon


  1. In a large skillet, cook bacon over medium low heat until done.
  2. Reserve 1 Tbs of bacon drippings, and store the rest for use another time.
  3. Add greens and garlic to hot pan with bacon and drippings.
  4. Stir frequently, and sauté until wilted.
  5. Sprinkle with lemon juice and serve immediately.
