  • 4 handfuls (cups) arugula
  • juice of 1 lemon
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • ¾ lb boneless, skinless chicken breasts, cooked and chopped


  1. In a large bowl, combine arugula, lemon juice, sea salt and black pepper. Toss to coat.
  2. Divide arugula on two plates. Top with chicken to serve.

    How is this recipe 32 grams of fat? There’s not a bit of fat that I can see. Also, is 4 cups of arugula per person or 2 cups per person?
